From صَرْصَرَ (ṣarṣara, to squeak), due to the animal’s sound, or the reverse, and the animal-name may be borrowed from Aramaic צרצרא / ܨܪܨܪܐ (/⁠ṣarṣārā⁠/), ܨܪܨܘܪܐ (ṣarṣōrā), as this name isn’t even attested in South Semitic.
